Instructions:
1. Preheat oven to 375°F.
2. Score the pork belly skin with a sharp knife and season with salt and pepper.
3. In a skillet over medium heat, sear the pork belly skin-side down until crispy, about 5 minutes.
4. Remove the pork belly from the skillet and set aside.
5. In the same skillet, add the diced habanero peppers and peaches, sautéing until softened.
6. Deglaze the skillet with bourbon and stir in brown sugar until caramelized.
7. Return the pork belly to the skillet, skin-side up, and pour the bourbon peach mixture over the top.
8. Place the skillet in the preheated oven and roast for 1-1.5 hours, or until the pork belly is tender.
9. In a separate saucepan, melt butter over medium heat until it starts to brown.
10. Remove from heat and whisk in bourbon until well combined.
11. Drizzle the caramelized bourbon butter over the cooked pork belly before serving.
