Low carb Ketovore hamburger buns take 2

My attempt to make low carb bread using mostly carnivore ingredients. While the baking powder contains some carbs and corn starch, it is minimal for the recipe. Unlike other keto breads, there is no plant based fiber like almond flour or coconut flour. This is very close to being a carnivore bread and would most likely be considered keto bread.

Instructions
Step 1
Preheat oven to 325 degrees. I use convection oven that then sets temp to 300.
Step 2
In measuring glass, mix yeast in warn water (about 120 degrees) with sugar. Mix well and set aside to let yeast bloom.
Step 3
Add to mixing bowl and blend well. I use speed 3 on my Kitchenaid stand mixer for the entire recipe. Each time I add dry ingredient, I stop mixer to add and then slowly bring mixer to speed to keep powdered ingredients from flying into the air.

Step 5
Stop mixer and add ingredient. Extra blending time allows gelatin to dissolve

Step 11
Stir in cheese with spoon.
Step 12
Use silcone hamburger mold baking pan with 6 bun spots placed on a cookie sheet. Spray pan lightly with avocado oil spray or apply light coat of bacon grease with a paper towel. Add equal amounts of mixed ingredients to molds and spread with a greased/oiled spoon.
Step 13
Place in oven and check after 20 minutes. Cook until tops are light brown and spongy to touch. Remove from oven and let cool. Once cool, buns can be sliced in half for making a hamburger or consumed whole.
