Instructions

Step 1
Add all the ingredients to a bowl and mix until you have a wet, sticky dough.
Step 2
Cover the bowl with a tea towel and leave to rise for 1 hour until it has doubled in size with bubbles on the surface.
Step 3
Using a spoon bring the edges in until it roughly forms a large ball.
Step 4
Dust a surface with some flour and scrape the dough on to the surface.
Step 5
Gently form a ball without over folding or kneading; do not add more flour.
Step 6
Place some parchment paper in a bowl and place the dough inside and cover.
Step 7
Leave to rest for a further 15 mins on the countertop.
Step 8
Preheat the oven to 230°C (446°F).
Step 9
Place a dutch oven, an oven-proof pan, or a bread tin in the oven to heat up for 10 mins.
Step 10
Remove the pot from the oven and place the parchment paper and dough inside.
Step 11
Dust the dough with some flour and score if desired; cover with an oven-safe lid or another bowl.
Step 12
Bake for 30 mins, remove the lid, and continue to bake for 10 mins.
Step 13
Remove from oven and leave to rest until it’s no longer too hot before cutting.
