Instructions
Step 1
Preheat oven to 400 degrees F

In stand mixer with paddle attachment, cream together butter and brown sugar
Step 3
When smooth, add eggs and vanilla, continue to mix
Step 4
In separate bowl, combine all dry ingredients
Step 5
Slowly spoon dry ingredients into wet mixture with mixer on low speed
Step 6
With spatula, scrape down sides of mixer bowl and fold in diced apples
Step 7
Spoon mixture into muffin tin with liners
Step 8
Bake approximately 20-30 minutes
