Instructions

Step 1
Preheat oven to 425Β°F (220Β°C).
Step 2
In a bowl, whisk flour, baking powder, salt, and sugar.

Cut in the cold butter until crumbly.
Step 4
In another bowl, mix ricotta, egg, orange zest, and almond extract, then stir into dry mixture until just combined.
Step 5
Turn dough onto floured surface, knead briefly, and roll into a rectangle.
Step 6
Fold into thirds like a letter, roll again, and repeat for flaky layers.
Step 7
Cut into strips, twist gently, and place on parchment-lined tray.
Step 8
Brush with melted butter, sprinkle sugar and almonds.
Step 9
Bake 13–15 minutes until golden and puffed.
