Biscotti is the most popular recipe in Italian cuisine.
Instead of almonds, you can use any nuts; instead of cherries, use any candied fruit or dried fruit.
Biscotti is served with coffee, hot chocolate, or wine.

Step 1
Fry almonds in a dry pan
Step 2
Separate the white from the yolk of one egg.
Set aside the yolk (we will grease the dough with it before baking).
Whisk 2 eggs and one egg white with sugar and vanilla sugar.

Add the baking powder and flour.
Stir the mixture.
Step 4
Add almonds and cherries.
Mix.

Whisk the egg yolk.
Step 6
Cover the baking tray with parchment paper or grease it with oil. Form bars from the dough and place them on a baking sheet.
Step 7
Brush with egg yolk. Preheat the oven to 360 degrees F (180 degrees C) and bake for 30-35 minutes. Let cool slightly.
Step 8
Cut into pieces.
Step 9
Place them in a baking dish (or on a baking tray). Return to the oven and bake until golden brown (about 10 minutes).
