Pummies
Cake- like cookies that stay soft and delicious. They can be varied by using traditional pumpkin pie spice with raisins and nuts, or maple lemon and ginger, or rum flavoring and chocolate. Makes 5 doz cookies

½ cunsalted butter
½ cbrown sugar
firmly packed
½ cGranulated Sugar
egg
lightly beaten
1 ccanned pumpkin
2 call purpose flour
1 tspbaking soda
½ tspsalt

Instructions
Step 1
Preheat oven to 375°F
Step 2
In a large mixing bowl with electric mixer, beat butter, brown sugar and granulated sugar
Step 3
Stir in egg and pumpkin
Step 4
Add any flavorings if using
Step 5
In a separate bowl Mix flour with baking soda and salt
Step 6
Add lemon zest or spices if using
Step 7
Add flour mixture to pumpkin mixture stirring well until mixed
Step 8
Stir in chocolate chips or ginger if using
Step 9
Drop dough by teaspoonfuls onto lightly greased baking sheets
Step 10
Bake in oven 15 mins or until cookies are firm
Step 11
Remove from baking sheets and allow to before storing
