Cook or reheat the chicken breast until fully done, then slice or shred it.
In a small bowl, mix Greek yogurt (or light mayo) with salt, pepper, and olive oil to make the sauce.
Lay the tortilla flat on a plate.
Spread the sauce evenly in the center of the tortilla.
Layer lettuce, tomato, cucumber, and chicken on top.
Add cheese if desired.
Fold in the sides of the tortilla, then roll it tightly from the bottom up.
Slice in half and serve immediately, or wrap in foil for later.
