Step 1
Cut the pork into large chunks
Step 2
Heat up the lard over medium high heat in a big pot. Fry the pork in the lard until brown and crispy
Step 3
Reduce heat to low then add the coke, orange juice, peppercorn, cloves, garlic, onions and bay leaves
Step 4
Bring to a simmer, cover and cook on low for 2hrs or until tender. 30 mins before done, uncover and let simmer uncovered to reduce the liquid
Step 5
Once tender, pull out the pork and serve
