Autumn Apple Cake

Delight in the warmth of autumn with this scrumptious apple cake. Fresh Bramley apples and a hint of lemon combine beautifully in this easy-to-make treat.

Instructions

Step 1
Pre-heat oven to 180C/160C fan/gas mark 4.
Step 2
Grease and line a 23-24cm loose bottom cake tin or 2 x loaf tins.
Step 3
Grate zest and squeeze lemon juice.
Step 4
Peel & core apples and cut into 1 cm pieces. Toss in lemon juice.
Step 5
Cream butter, caster sugar and lemon zest until pale and fluffy.
Step 6
Beat in eggs one at a time, adding a little flour each time.
Step 7
Sift remaining flour and baking powder and fold in with the ground almonds.
Step 8
Drain the apple pieces well and stir into the mixture.
Step 9
Spoon the mixture into the cake tin(s) and lightly level off the surface.
Step 10
Sprinkle with the demerara sugar.
Step 11
Bake in the oven for 1 hour until a skewer inserted in the centre comes out clean.
Step 12
Cool in the tin(s) for 10 mins before removing.
Step 13
Enjoy warm with double or clotted cream.
