Instructions

Step 1
Roast the vegetables

Preheat oven to 400°F.

Toss the sweet potatoes, cauliflower, and portobello mushrooms in a light coating of olive oil, salt, and pepper.

Roast for 20–25 minutes, flipping halfway, until golden and tender.

Cook the turkey mixture

Heat a skillet over medium heat and add a drizzle of olive oil.

Sauté diced onion for 2–3 minutes until translucent.

Add ground turkey and cook until browned, breaking it apart.

Stir in garlic, salt, and cumin; cook for 1–2 minutes more.

Add black beans and cook another 2 minutes to heat through.

Assemble the bowl

Layer roasted sweet potato and cauliflower on the bottom of the bowl.
