Instructions

Step 1
Preheat oven to 375. Lightly grease medium casserole dish. Layer choice of peppers across bottom of pan. Bake about 10 minutes or until peppers are softened.
Step 2
Over medium heat, add olive oil and saute garlic and shrimp 1 or 2 minutes, or until fragrant.
Step 3
Add chopped spinach and onion. Cook 2-3 minutes or until spinach is wilted.
Step 4
Combine ricotta, half mozzarella half the parmesan and seasonings in large bowl. Mix well to combine.
Step 5
Gently fold in spinach, onions, garlic and shrimp. Spread evenly over peppers.
Step 6
Sprinkle with remaining cheeses and breadcrumbs or panko. Bake 25-30 minutes or until top is bubbly and golden brown.
Step 7
Cool 5-10 minutes before serving to set.
