Instructions

Step 1
1. Preheat oven to 350°F (175°C). Line two muffin tins with 24 cupcake liners.

2. In a medium bowl, whisk together flour, cinnamon, and baking soda.

3. In a large bowl, mash the bananas well. Whisk in eggs, vanilla, applesauce, and oil (if using) until smooth.

4. Add the dry ingredients and stir gently until just combined — don’t overmix.
Step 5
5. Divide the batter evenly among the cupcake liners (about ¾ full).
Step 6
6. Bake 18–22 minutes, or until a toothpick comes out clean.

7. Cool completely before serving or adding icing.
