2 lbsbeef chuck
cubed
2 Tbspbutter
1 lbpotatoes
cubed
8 ozmushrooms
sliced
1onion
chopped
4carrots
sliced
4garlic cloves
minced
4 cupsbeef broth
2 Tbspworcestershire sauce
2 Tbsptomato paste
1 tspsalt
½ tsppepper
½ tsprosemary
½ tspxanthan gum
whisked into 2 tbsp cold broth stir in on Sauté done in 30 seconds, OR 1 egg yolk, tempered, for richer gravy
Instructions
Step 1
Sauté butter in Instant Pot; brown beef in batches (5 min/batch).
Step 2
Add potatoes, mushrooms, onion, carrots, garlic; cover with broth. Stir in Worcestershire, tomato paste, salt, pepper, rosemary.
Step 3
Seal and cook on Meat/Stew for 35 min; natural release 10 min.
Step 4
Mix cornstarch with water for slurry; stir in on Sauté to thicken (2–3 min). Note: Use Xanthan gum instead for low carb.
Step 5
Total time: 1 hr 15 min. Pro tip: Add chili powder for heat, per reviews.
