Ezogelin Soup
Ezogelin Çorbası is a comforting Turkish soup made with red lentils, bulgur, and rice, enriched with a spicy butter topping. Perfect for warming up on cold days.

Ingredients
4 servings
2 Tbspolive oil
1 Tbspbutter
2onion
medium, diced
8 clovesgarlic
minced
2 Tbspred pepper paste
Turkish, biber salçasi
2 Tbsptomato paste
1 Tbspdried mint
1 tspground cumin
1 tsppaprika
Red pepper flakes
to taste
1 cupred lentils
rinsed and drained
¼ cupbulgur
coarse, rinsed and drained
¼ cupshort-grain rice
rinsed and drained
Salt
pepper
to taste
Chicken stock
or water as needed
1 stickbutter
1 Tbspmint
1 Tbsppaprika
1 TbspTurkish red pepper paste

Instructions
Step 1
In a large soup pot, saute onions and garlic until fragrant before adding in both your tomato paste and Turkish red pepper paste.
Step 2
Add your lentils, bulgur, and short-grain rice and mix. Add in chicken stock until the pot is filled. Let simmer for 30-40 minutes, or until the grains are soft and fully cooked and the soup has thickened. Make sure to stir occasionally.
Step 3
While this is going, make your spiced butter. Just combine everything under “spiced butter topping” and whisk together until combined.
Step 4
Serve your Ezogelin soup with a squeeze of lemon juice, and a drizzle of the spiced butter and enjoy!
