Instructions: Preheat Oven & Prep: Preheat your oven to 350°F (175°C) and grease a 9x13 inch casserole dish. Cook Chicken: In a large skillet, heat some olive oil and cook the ground chicken with the diced onion and minced garlic until the chicken is browned and no longer pink. Season with salt, pepper, garlic powder, onion powder, and smoked paprika. Drain any excess fat if necessary. Combine Ingredients: In a large mixing bowl, combine the cooked ground chicken mixture, sliced potatoes, cream of mushroom soup, milk, and half of the shredded cheese. Mix everything thoroughly until well coated. Assemble Casserole: Pour the mixture into the prepared casserole dish, spreading it into an even layer. Bake: Cover the dish with aluminum foil and bake in the preheated oven for about 1 hour, or until the potatoes are fork-tender. Add Cheese & Finish: Remove the foil, sprinkle the remaining shredded cheese evenly over the top, and bake uncovered for another 15-20 minutes, or until the cheese is melted, bubbly, and golden brown. Serve: Let the casserole cool for a few minutes before serving. This versatile recipe can also be adapted using frozen hash brown potatoes, and other vegetables like corn or peas can be added for extra flavor and nutrients.
