Instructions

Step 1
Combine flour, salt and yeast. Pour in olive oil and warm water. Mix until sticky dough forms. Cover with plastic wrap and let sit 20 minutes.
Step 2
Lightly wet hands. Grab one side of the dough, stretch it upward and fold it over to the other side. Repeat all sides until there are no sides left. Cover again and let rest for 20 minutes. Repeat two more times.
Step 3
After the third fold cover and let rest covered in a warm place for 1 to 1.5 hours, or until puffed up and slightly wobbly.
Step 4
Transfer gently to floured surface and sprinkle with additional flour. Carefully divide in two and shape into two long ciabatta loaves, without knocking too much air out.
Step 5
Cover and let sit for 20 minutes while you preheat oven to 425 degrees F.
Step 6
Transfer to a parchment covered baking tray, and bake for 20-25 minutes, or until golden brown and crusty.
