Step 1
Preheat the oven to 200°C (fan 180°C) / Gas Mark 6.

Slice the puff pastry into thin strips, about 1 cm wide.

Wrap each sausage with the pastry strips, leaving a small gap near the top to create a “face” area. Overlap the strips slightly to mimic mummy bandages.

Place the wrapped sausages on a baking tray lined with parchment paper.

Brush the pastry with beaten egg to give it a golden finish.

Bake in the preheated oven for 10–12 minutes, or until the pastry is puffed and golden brown.

Decorate the mummies: once cooled slightly, use a small dot of mayonnaise to create eyes in the exposed “face” area. Add a sesame seed in the centre of each dot to complete the eyes.
