Step 1
Heat olive oil in a large pot over medium heat.
Step 2
Add minced garlic, diced bell peppers, and diced onions; sauté until softened.
Step 3
Stir in the pulled pork, salt, black pepper, cumin, chili powder, and paprika.
Step 4
Pour in the beer, tomato sauce, and crushed tomatoes. Bring to a simmer.
Step 5
Add the drained kidney beans and northern beans, and let it simmer for about 30 minutes, stirring occasionally.
Step 6
Alternative to leftover pulled pork. Smoke your favorite cut of meat rubbed in seasoning. Add half of the onion and peppers with it. After smoking for at least an hour place ingredients in an insta-pot for 20 minutes in pressure mode.
