Instructions
Step 1
Preheat oven to 400,
Brush sheet pan with olive oil,
Whisk egg whites and salt in a bowl,
Mix breadcrumbs, small amount of flour, and Parmesan in separate shallow bowl,
Slice eggplant into disks
Step 2
Dip eggplant disks into egg whites and then bread crumb mixture,
Assemble on sheet pan with wire rack
Step 3
Bake eggplant until tender and lightly brown - 20 minutes,
Remove from oven and flip eggplant,
Cover with coarsely shredded mozzarella and marinara and sprinkle with more breadcrumbs
Step 4
Bake another 10 minutes to melt cheese
