For the Chicken
450gboneless skinless chicken breast
cut into bite-sized cubes
15mlolive oil
2cloves garlic
minced
½ tspsalt
½ tspblack pepper
½ tsppaprika
½ tspdried parsley
For the Creamy Garlic Sauce:
100mllow-fat Greek yogurt
60mlchicken broth
15glight cream cheese
5mlDijon mustard
¼ tspcrushed red pepper flakes

For the Cheesy Potatoes:

Step 1
Roast the Potatoes:
Step 2
Preheat oven to 200°C (400°F). Toss cubed potatoes with olive oil, salt, pepper, and garlic powder. Spread evenly on a parchment-lined baking tray and roast for 25–30 minutes, flipping halfway, until golden and crispy.

Cook the Chicken:

Heat olive oil in a large nonstick pan over medium heat. Add chicken pieces, season with salt, pepper, paprika, and parsley. Sauté for 6–8 minutes until fully cooked and lightly browned. Remove from the pan and set aside.

Make the Creamy Sauce:

In the same pan, add minced garlic and cook for 30 seconds. Stir in Greek yogurt, chicken broth, cream cheese, and Dijon mustard. Whisk until smooth and simmer for 2–3 minutes. Add red pepper flakes if desired.

Combine:

Add the cooked chicken back into the sauce. Stir to coat evenly and simmer for another 2 minutes until thickened.

Add the Cheese:

Once the potatoes are roasted, sprinkle shredded cheddar cheese over them while still hot and let it melt.

Divide the cheesy potatoes and creamy garlic chicken evenly into 4 meal prep containers. Garnish with chopped parsley.
