Instructions
Step 1
Peel and finely chop onion.

Cut chives into 1 cm lengths.

Mix corn, chives, cheese, and onion in a large bowl.

Break the eggs into the bowl. Stir the eggs into the mixture.

Stir in the flour, salt, and pepper. Stir thoroughly and adjust seasoning to taste.

Heat a large frying pan over medium heat.

Add oil to the pan and swirl to coat evenly.

Press the mixture into a 1/4-cup measure to create circular patties about 1 cm thick.

Fry the fritters for 3 minutes on each side until golden brown. There should be room for eight fritters in the pan, so this will require three batches.
