Instructions
Step 1
Turn Instant Pot to Sauté. Add oil and brown chicken thighs skin-side down for 3–4 minutes. Flip for 1 minute. Remove chicken.
Step 2
Add 1½ cups water, use a wooden spoon to scrape up the brown bits on the bottom.
Step 3
Pour 1 cup rice into the bottom of the pot.
Step 4
Add the frozen green beans on top of the rice. Do not stir.
Step 5
Place the browned chicken thighs on top, skin-side up.
Step 6
Close lid, set to High Pressure for 12 minutes.
Step 7
Let the pot Naturally Release for 5 minutes, then quick release the remaining pressure.
Step 8
Serve as-is, or place chicken under the broiler for 3–5 minutes to crisp the skin
