Step 1
In a large pan, over a medium heat add the onion and sweat for a few minutes. Break the beef into pieces and add it to the pan and brown the beef.
Step 2
Add the garlic and stir in for 2 minutes.
Step 3
Stir in the tomatoes, taco seasoning, chicken broth, sweetcorn, pinto beans, and black beans. Bring to a boil over a medium-high heat. Reduce the heat to medium-low, partially cover and cook, stirring occasionally for about 20 minutes. Season with salt to taste.
Step 4
Serve topped with sour cream, chopped coriander leaves, cheese, and avocado if you like.
