Instructions

Step 1
Mix the dry stuff: In a bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt. Set aside like it’s a toddler in time-out.

Cream the butter + sugars: Beat the butter, brown sugar, and white sugar until fluffy—like “if clouds were made of carbs."
Step 3
Add the wet stuff: Mix in the egg, maple syrup, and vanilla until smooth.

Combine: Add the dry ingredients and mix until just combined. Don’t over-do it; cookies get tough faster than a mom at bedtime.

Chill (yes, you actually have to): Pop the dough in the fridge for at least 1 hour. Overnight is even better.

Cool: Let them sit on the tray for 5 minutes before transferring off. They finish cooking as they cool.
