150glight brown sugar
80gwhite sugar
1egg
80mlpure maple syrup
2 tspvanilla
270gall-purpose flour
1 tspbaking soda
½ tspbaking powder
1 tspcinnamon
½ tspsalt

Instructions
Step 1
Mix the dry stuff:
In a bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt. Set aside like it’s a toddler in time-out.
Step 2
Cream the butter + sugars:
Beat the butter, brown sugar, and white sugar until fluffy—like “if clouds were made of carbs."
Step 3
Add the wet stuff:
Mix in the egg, maple syrup, and vanilla until smooth.
Step 4
Combine:
Add the dry ingredients and mix until just combined. Don’t over-do it; cookies get tough faster than a mom at bedtime.
Step 5
Chill (yes, you actually have to):
Pop the dough in the fridge for at least 1 hour. Overnight is even better.
Step 6
Roll + coat:
Scoop tablespoon-sized balls, roll them, then coat generously in your cinnamon-sugar mix.
Step 7
Bake:
Bake at 350°F (175°C) for 9–11 minutes. They should look slightly underdone in the centre; that’s the secret to the chew.
Step 8
Cool:
Let them sit on the tray for 5 minutes before transferring off. They finish cooking as they cool.
