Instructions

Step 1
Prepare the Marinade: In a medium glass bowl, combine the orange concentrate, orange juice, soy sauce, brown sugar (if using), cumin, and cayenne pepper. Whisk well to combine.

Marinate the Alligator: Reserve about half of the marinade for basting later. Add the alligator cubes to the remaining marinade in the bowl and stir to coat well. Cover and refrigerate for at least 15 minutes, or up to 2 hours for increased flavor absorption.
Step 3
Assemble the Kabobs: Thread the marinated alligator cubes onto the soaked wooden skewers, alternating with your choice of vegetable or fruit cubes. Do not overstuff the skewers.
Step 4
Preheat Grill: Heat your grill to high heat. Oiling the grill grates can help prevent sticking.
Step 5
Grill the Kabobs: Place the kabobs on the hot grill. Cook for a total of 6-8 minutes, turning once halfway through.
Step 6
Baste and Finish: Brush the kabobs with the reserved marinade during the first 5 minutes of grilling. Discard any leftover marinade after use.
Step 7
Serve: Ensure the internal temperature of the alligator meat reaches 160°F (71°C). Serve the kabobs hot, perhaps over a bed of rice or with a remoulade dipping sauce.
