Ingredients

3Rib Rib Roast
from short end
2 Tbsdried oregano
2 TBSDried thyme
2 Tbspaprika
2 tsppepper
Cayenne pepper
1 ½ tspsalt
Instructions
Step 1
Preheat Oven 425°
Step 2
Combine oregano, thyme, paprika, black pepper, Cayenne pepper and salt in small bowl. Take Mixture and put in top and sides of the Roast
Step 3
Put Roast in a larger roasting pan and Roast at 425° for 30 minutes. Then baste with fat from bottom of the pan. Continue to Roast at 400° for one full hour. (Internal temp at 85°-90°)
Step 4
Transfer Roast to serving platter after ans cover with foil for 45min to 1 hour. Save dripping for thr gravy.
Step 5
Gravy: 1 cup red wine
1/2 cup water
1/4 cup fat roast dripping Combine ingredients, bring to boil. Stir, strain, and set aside.
