Instructions

Step 1
Mix the batter: Whisk all dry ingredients in a bowl. In a jug, whisk egg, milk, and oil. Pour wet into dry and whisk until smooth — the texture should be like thin pancake batter. If too thick, add 1—2 tbsp extra milk. If too thin, add 1 tbsp tapioca.
Step 2
Heat your pan: Use a large non-stick frying pan or crepe pan (28-30cm). Medium heat — not too hot or they crisp.
Step 3
Cook the wraps: Lightly oil the pan. Pour in about 1/3 cup (80ml) batter and swirl to coat the whole pan. Cook 1-2 minutes until the edges lift and the surface looks matte. Flip and cook 30—40 seconds more. Stack on a plate under a clean tea towel to keep them soft.
