drained, rinsed, and lightly mashed
1red onion
finely diced
60gfresh chives

2lemons
zest and juice of
4 tablespoonsextra virgin olive oil
1 teaspoonground cumin
1 teaspoonsmoked paprika
2 tablespoonsblack sesame seeds
2 tablespoonstoasted sesame seeds
3 tablespoonspumpkin seeds
fresh basil leaves
chopped, plus extra whole leaves for garnish
freshly ground black pepper

Instructions
Step 1
Preheat oven according to pastry instructions
Step 2
Roll out and pre-bake pastry in a tart tin until golden; let cool
Step 3
Make the filling: In a large bowl, combine: Ricotta cheese
Lightly mashed chickpeas
Diced red onion
Chopped chives
Chopped fresh basil
Lemon zest and juice of 1½ lemons
2 tablespoons olive oil
Cumin and paprika
Black pepper to taste

Mix everything together until well combined

Spread the mixture evenly into the pre-baked pastry shell

Top with cucumber: Thinly slice cucumber and arrange decoratively on top, slightly overlapping

Drizzle remaining olive oil and lemon juice over cucumbers

Sprinkle remaining seeds over the top

Garnish with fresh basil leaves
