Greek gnocchi traybake - Riverford

Traybakes are the ultimate low-effort meal, and this one is inspired by Greek flavours with Kalamata olives, lots of colourful veg, sheep’s cheese and fresh herbs, all alongside comforting gnocchi, which goes golden and slightly crispy when roasted. There’s a small amount of veg prep involved here then it goes into the oven for half an hour to work its magic – the hardest part is the wait!

Instructions

Step 1
Preheat oven to 180°C/gas mark 4 then prep all the veg.
Step 2
Add the onion, garlic, courgette and pepper to a large roasting tin along with the tomatoes, olives and gnocchi. Scatter in the oregano, thyme, and a pinch of mint. Add 2 tbsp olive oil with a generous pinch of salt and pepper. Mix well to evenly coat everything in the oil and herbs. Transfer to the oven and cook for 25-30 minutes until the veg is tender and starting to colour.
Step 3
Slide the tray out of the oven, crumble over the cheese and return to the oven for a further 5- 10 minutes. Zest the lemon.
Step 4
When ready, taste and tweak the dish with salt, pepper, and a generous squeeze of lemon juice to your liking. Serve garnished with the parsley and a scattering of lemon zest.
