Instructions

Step 1
1. Preheat your oven to 325°F (163°C). In a medium bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.

2. In a large mixing bowl, beat the softened cream cheese until smooth. Add 1 cup sugar and vanilla extract, and continue mixing until well incorporated.

3. Add the eggs one at a time, beating after each addition. Stir in the heavy cream until the batter is smooth and creamy.

4. Pour the batter over the prepared crust in the pan. Bake for 55-60 minutes, or until the center is set but still slightly jiggly.
Step 5
5. Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour. Then, refrigerate for at least 4 hours or overnight.
Step 6
6. Before serving, sprinkle about 1 tablespoon of the remaining sugar evenly over the top of the cheesecake. Use a kitchen torch to caramelize the sugar until it forms a crisp layer.
