Instructions
Step 1
1. Make the broth
Dissolve 3 Knorr cubes in 3½ cups hot water. Set aside.
Step 2
2. Sauté veggies
Heat olive oil and butter in a medium pot over medium heat.
Add onion and bell pepper; cook 4–5 minutes until soft.

3. Build flavor
Add garlic and tomato paste. Cook 30–60 seconds until fragrant.

4. Toast the rice
Stir in rinsed rice and cook 1 minute, stirring, to coat grains.
Step 5
5. Season + simmer
Add prepared broth, chili powder, paprika, turmeric, oregano, and salt.
Stir, bring to a boil.
Step 6
6. Cook
Cover, reduce heat to low, and simmer 15–18 minutes until liquid is absorbed.
Step 7
7. Rest + fluff
Turn off heat. Let sit covered 5 minutes, then fluff with a fork.
Step 8
8. Finish
Taste and adjust salt if needed. Top with cilantro if using.

* Add 1 extra tablespoon butter at the end for richer, calmer flavor
