Easy Sausage-Bean Skillet

About 27 grams of protein per serving, depending on the sausage used. Tastes even better the next day! Notes - Super flexible recipe - you can swap out the sausage, beans, leafy green, and cheese based on what you have or what is available at your store. I used all Aldi products for this recipe.

Instructions

Step 1
Slice the sausage thinly; brown in skillet on med-high for 2-3 minutes

Remove sausage from skillet, reduce heat to medium, add 1 tbl olive oil, and saute onion and carrot for 4-5 minute or until slightly soft

Add garlic and saute an additional 30 seconds, not allowing garlic to burn

Drain Beans - DO NOT RINSE !!

Add chicken broth and oregano to skillet, stir, then add the drained beans. Season with salt and pepper to taste at this point.

Allow skillet to simmer on med until broth is hot. Add in the boursin cheese and allow to melt

Add sausage back into skillet, and add spinch to wilt. Remove from heat and let stand 5 min
