It is important to use at least 20% fat ground beef. Otherwise your meatloaf will be dry, and no one wants dry meatloaf. Its also important to use steel cut oatmeal for the right texture.

Instructions

Step 1
Preheat oven to 350 degrees F.
Step 2
In a small skillet, sauté onions and garlic until transparent. Place in freezer for a few minutes to cool down.
Step 3
In a large mixing bowl add eggs and beat until consistent. Add BBQ sauce, spices, oatmeal, onions, and garlic. Mix to combine.
Step 4
Add ground beef to bowl and mix well. You may have to use your hands.
Step 5
Add black olives and mix through.
Step 6
Add beef mixture to a greased baking dish. Make a small moat around the perimeter. I prefer a wider vs taller dish to provide for more surface area to get a nice crust.
Step 7
Bake for 50 minutes uncovered.
Step 8
Remove from oven and turn oven to Broil on high and spread a thin layer of BB sauce over meatloaf and place on top oven rack. Broil for approximately 5-10 minutes depending on your desired crust. Don't be afraid to have a reasonably black top, its better, I promise.
Step 9
Remove from oven and let rest for 5 minutes before serving.
