Ingredients

450gBoneless skinless chicken breast
cut into bite-sized pieces
1 Tbspolive oil
1Onion
medium, diced
2 clovesgarlic
minced
2 cupsBroccoli florets
chopped small
1Zucchini
medium, sliced or diced
1 cupMushrooms
sliced
½ cupchicken broth
½ cupGreek yogurt
Plain
1 TbspDijon Mustard
¼ cupShredded Mozzarella cheese
or Parmesan, optional
1 tspPaprika
Seasonings
½ tspDried Thyme
½ tspSalt
¼ tspBlack Pepper
Instructions
Step 1
Instructions: 1. Preheat oven to 375°F (190°C).
2. Heat oil in a pan. Sauté onion and garlic 2–3 mins.
3. Add chicken, seasonings. Cook until lightly browned.
4. Stir in mushrooms, broccoli, zucchini. Cook 3–4 mins.
5. Add broth, simmer 5 mins.
6. Remove from heat, stir in yogurt and Dijon.
7. Transfer to baking dish, top with cheese.
8. Bake 20–25 mins.
