Esters eatery has a seasonal lawnboy pizza that I've had once and have been craving but isn't currently available. This is my ode to it in pasta form.

Begin by prepping your ingredients. Finely chop garlic, thinly slice onions, grate your Parmesan and use a mandolin to shave the brussel sprouts on the largest setting.

Step 2
Add a dollop of bacon grease and 1 tablespoon butter to a 12 inch skillet. Let melt and add your onions. Stir and season lightly with salt then cover. Cook on medium high until the onions begin to brown 3-5 min. Remove lid, reduce heat to medium and continue to cook, stirring frequently and adding a dash of chicken stock each time you see browned bits sticking to the skillet. I used about 1/2 cup of stock in the process. Continue until well caramelized 15-20 min. When your onions look just about perfect do your last deglaze using a splash of white wine in place of stock. Remove from pan and set aside.

While the Onions are caramelizing, add bacon to a baking sheet and air fry at 395 for 12 min (you can bake as well, but will likely need to increase the time to 20 min) remove to a paper towel lined plate, leaving the grease on the sheet.

Add the shaved brussel sprouts to the baking sheet and air fry at 450 for 10 min. Stirring halfway through. Be sure to leave space so they char rather than steam. Depending on size of your pan you may need to do this in batches.

While brussel sprouts cook, start your pasta water (or use additional chicken stock for extra flavor) and cook your pasta according to directions - I did 9 min.

When onions are done set aside and use the skillet to prepare your garlic cream sauce. Add remaining butter to the pan and let foam, add garlic and saute until fragrant. Add flour and stir until a roux forms, cooking off the four. Add in heavy cream and remaining chicken stock. Stir to combine and let simmer until it begins to thicken. Off heat add Parmesan until combined.
