Instructions
Step 1
Preheat oven to 200°C. Whisk together flour, baking soda, baking powder, rice flour and salt together in a large bowl. Set aside.
Step 2
Place cubed butter into the bowl of a stand mixer and secure the paddle attachment. Use a medium-low setting.
Step 3
Let the mixer cream the butter for 30 seconds, and then add in the sugar and cream until light and fluffy, then add in the eggs (and vanilla if using) and blend until mixed.
Step 4
With the mixer on low speed, gradually add in the flour mixture. Add it in a little at a time until ingredients are incorporated. Then add in the chocolate chips and mix just until incorporated.
Step 5
Measure out cookies. Keep the cookies nice and tall and don't flatten them.
Step 6
Bake cookies for 10-12 minutes or until the tops are golden brown. Rest on the baking tray for 15mins before transferring to a cooling rack.
