Instructions
Step 1
Preheat oven to 425°F (220°C).
Step 2
Pat the chicken thighs completely dry with paper towels.
Step 3
Season the chicken generously on all sides with salt, pepper, and paprika.
Step 4
In a small bowl, whisk together the Dijon mustard, whole grain mustard, olive oil, honey, minced garlic, and thyme.
Step 5
Brush the mustard mixture over the top of each chicken thigh.
Step 6
Place chicken on a baking sheet or in a roasting dish.
Step 7
Bake for 35–40 minutes, or until the skin is crispy and the internal temperature reaches 165°F.
