Instructions
Step 1
1. Prep Lamb
Patties lamb shoulder dry with paper towels.
Score fat lightly with a sharp knife.
Rub generously with Salt and black pepper.
Step 2
2. Preheat Oven
Preheat to 300°F / 150°C
Step 3
3. Roasting Low and Slow
Place lamb shoulder in roasting pan.
Dot butter or tallow over the top.
Cover loosely with foil.
Roasting for 3-4 hours, basting occasionally with melted fat.
Step 4
4. Optional Crisping
For crispy top, remove foil in last 30 minutes and increase heat to 375°F/190°C.
Step 5
5. Rest
Remove from oven.
Let rest 10 minutes before carving.
Step 6
6. Serve
Slice or shed, spooning buttery pan juices over the meat.
