Instructions

Step 1
Season the beef with salt and ras el hanout (if you don't have ras el hanout, make your own with equal amounts of ground cumin, paprika, coriander, turmeric and cinnamon.
Step 2
Heat the oil in a pot and brown the beef. Remove the meat.
Step 3
Sauté chopped onions. Add garlic and ginger paste.
Step 4
Fry for a minute, return beef to pot, add beef stock, lemon peel, and cinnamon. Cover and simmer for 1 hour.
Step 5
Add dates and apricots. Simmer uncovered for 20 minutes, until thick.
Step 6
Remove lemon and cinnamon. Serve with coriander and rice.
