Instructions
Step 1
1. Season beef with salt and pepper.
Step 2
Heat a pot on medium-high heat, then add the beef and drizzle olive oil on top.
Step 3
Stir around to ensure beef is brown on each side.
Step 4
2. Add garlic and cook for 30-60 seconds, or until fragrant. Then add Massaman Curry Paste, shallots, garlic, mushrooms, bay leaves, carrots and chilli.
Step 5
Sauté for 1-2 minutes, until the vegetables start to soften.
Step 6
3. Add chickpeas, peppercorns, stock and Coconut Cream, and mix around.
Step 7
4. Bring mixture to a gentle simmer, and cook on low heat with lid on for about an hour, or until the meat becomes tender and falls apart easily. Add the peas, then stir through.
Step 8
5. Preheat oven to 200°C. Pour the mixture into a pie dish, then lay the pastry strips on top, ensuring that each strip is laid across the previous one, until it forms a lattice-like pattern. Brush on top with egg yolk, and sprinkle with sesame seeds to garnish.
Step 9
6. Bake for 15-20 minutes or until the pastry turns golden brown. Serve warm.
