Instructions
Step 1
Heat 25 g of butter in a saucepan, then add 1 small onion finely chopped and cook for 5 minutes until softened.
Step 2
Add 2 tablespoons of plain flour and cook for 2 minutes, then slowly stir in 200 ml of whole milk. Once everything is incorporated, simmer gently for 5 minutes until the sauce has thickened.
Step 3
Meanwhile, place two 200 g bags of spinach in a large colander. Pour over a kettle full of boiling water until the leaves wilt (you may need to do this twice).
Step 4
Put the spinach into a clean cloth, squeeze out any excess liquid, then chop roughly.
Step 5
Stir 100 ml of cream into the sauce and heat gently, then finely grate a little fresh nutmeg over it and season well.
