Cauliflower-Parsnips Mash

Instructions

Step 1
Bring a large pot of salted water to a boil.
Step 2
Add cauliflower florets and sliced parsnip to the pot.
Step 3
Cook until tender, 10-15 minutes.
Step 4
Drain well and remove excess moisture.

Food Processor Method:

Step 5
Transfer cauliflower and parsnips to food processor.
Step 6
Add cream cheese, heavy cream, cheddar cheese and green onion.
Step 7
Season generously with salt and pepper.
Step 8
Process and until smooth.

Potato Masher Method:

Step 9
Return Cauliflower to pot and add cream cheese. Use potato masher until smooth.
Step 10
Add heavy cream, cheddar cheese, green onion, salt and pepper.
Step 11
Stir to combine.
