Smoky Sweet Potato, Mushroom & Bean Skillet w/ Turkey sausage and Lemon Yogurt sauce

Ingredients
4 servings
2sweet potatoes
medium, diced
1 Tablespoonolive oil
for roasting
1 ½ tspsmoked paprika
½ tspblack pepper
salt
to taste
8 ozsmoked turkey sausage
8 ozmushrooms sliced
1can pinto beans
drained and rinsed
3 cupsfresh spinach
1onion
small, diced
2cloves garlic
minced
¾ tspground cumin
½ tspgarlic powder
¼ tspground coriander
½ tspchili powder
honey
Smoky Lemon Yogurt Sauce
Instructions
Roast the potatoes
Step 1
Heat oven to 425
Step 2
Toss sweet potatoes with oil, salt, pepper and paprika
Step 3
roast 25-30 minutes until tender and carmelized
Brown the sausage
Step 4
Heat large skillet over Medium heat
Step 5
Add sausage and cook until well browned and remove
Build the flavor base
Step 6
Add a bit of oil to pan and Saute onion until soft
Step 7
Add mushrooms and cook until deeply browned
Step 8
stir in garlic, cumin, coriander and chili powder and cook for another 30 seconds.
Combine
Step 9
Return sausage to skillet
Step 10
Add beans, roasted sweet potatoes, and fresh spinach. Cook until everything is warmed through and spinach is wilted.
Finish and Serve
Step 11
Finish with a bit of lemon juice (optional) and salt and pepper to taste. Drizzle lightly with honey
Step 12
Serve along with the Smoky Lemon Yogurt Sauce
