Instructions

Step 1
In a bowl, whisk together the sugar, golden syrup, oil, plant milk, and vanilla extract. Whisk the ingredients by hand until glossy and just combined, about 20 to 30 seconds. Be careful not to over whisk.

Step 2
In a separate bowl, use a spatula to mix together the flour bicarbonate of soda and salt. Tip the dry ingredients into the wet and mix with a spatula until just combined.

Step 3
Chop the dark chocolate into small chunks and fold these into the mixture.
Step 4
Cover the dough and chill for at least 1 hour or ideally overnight.
Step 5
Preheat the oven to 175° c or 165° c fan. Line baking trays with parchment or a silicone mat. Place the balls of cookie dough in roughly one tablespoon portions evenly on the baking trays and bake in the oven for about 10 minutes.
Step 6
When the cookies are still fairly light in the middle, but starting to brown at the edges, take them out of the oven. Allow the cookies to cool in the tray for 10 minutes before transferring to a cooling rack.
