Beef Queso Nachos

Ingredients

1 Tbspolive oil
divided
1onion
medium, diced
1 lbground beef
kosher salt
ground black pepper
½ tspchili powder
½ tspgarlic powder
½ tsponion powder
½ tspsmoked paprika
1 tspcumin
1 Tbsptomato paste
¼ cupwater
or more as needed
2 jarswhite queso
2 cupsshredded mexican cheese blend
2 ouncetortilla chips

Instructions
Step 1
Preheat your oven to 350°F and line two large sheet pans with foil.
Step 2
Add the oil to a large skillet over medium heat.
Step 3
Add the onion and saute until softened, then add the ground beef and brown, breaking up with a wooden spoon. Drain any excess grease and discard.
Step 4
Season the meat with salt, pepper, garlic powder, onion powder, paprika, and chili powder.
Step 5
Add the tomato paste and water and stir. Let simmer so flavors come together. Remove from heat after 5 minutes
Step 6
Spread both jars of queso on one of the prepared pans, then top with ground beef mixture, followed by shredded cheese
Step 7
Bake until the cheese is melted, about 10-15 minutes.
Step 8
Remove from oven and add toppings like salsa, sour cream, guacamole, and cilantro.
