Step 1
Preheat oven to 350°F.
Step 2
• In a baking dish, whisk together coconut milk/cream, curry sauce, soyaki, and garlic.
Step 3
• Add ramen bricks, broth, and frozen corn. Press ramen gently so it’s mostly submerged.
Step 4
• Cover tightly with foil and bake 20 minutes.
Step 5
• Remove foil, stir well, and break ramen apart.
Step 6
• Crack eggs on top.
Step 7
• Bake uncovered 10–15 minutes, until ramen is tender and eggs are just set.
Step 8
• If eggs need more time, loosely cover and bake 5 more minutes.
Step 9
• Finish with green onions and chili oil crunch if using.
