Some days I have energy and feel motivated to cook up something spectacular for dinner, but most days I don't. Most days are spent working and running kids around to activities, and by the time we hit 4 p.m., my energy is zapped. Cultivating this healthy eating journey into a long-term lifestyle demanded that I have recipes like this Lazy Day Minestrone in my arsenal. This is a great dump meal.

Ingredients
5 servings
4 cupsfrozen mixed vegetables
3 cupvegetable broth
1 x 15 ouncecan diced tomatoes
drained
1 x 15 ouncecan white beans
rinsed and drained
1 cupgluten-free elbow pasta
1stalk celery
chopped
5cloves garlic
minced
1 teaspoonfresh lemon juice
1 teaspoondried oregano
1 teaspoondried basil
1 teaspoonextra-virgin olive oil
Instructions
Step 1
In an electric pressure cooker, combine the mixed vegetables, broth, tomatoes, beans, pasta, celery, garlic, lemon juice, oregano, basil, and olive oil. Stir to combine.
Step 2
Place the lid on the cooker and make sure the vent valve is in the SEALING position. Using the display panel, select the MANUAL/PRESSURE COOK function and HIGH PRESSURE, and use the +/- buttons until the display reads 5 minutes.
Step 3
When the cooker beeps to let you know it's finished, switch the vent valve from the SEALING to the VENTING position, administering a quick release. Use caution while the steam escapes-it's hot. Stir in Parmesan, fresh basil, and season with salt and pepper to taste. Serve warm.
