Step 1
Combine butter, garlic, and parsley in a bowl. Roll into sausage shape using clingfilm and chill for at least 10 mins.
Step 2
Prepare three bowls: one with flour and seasoning, one with beaten eggs, and one with breadcrumbs.
Step 3
Slice pockets into chicken breasts, insert chilled butter, then coat with flour, egg, and breadcrumbs.
Step 4
Preheat oven to 200°C/400°F/gas mark 6. Heat oil in a pan, cook chicken for 2-3 mins each side until golden.
Step 5
Transfer to baking sheet and bake for 15-20 mins until cooked through. Serve with potato wedges and salad.
