Instructions
Step 1
In a saucepan, heat the oil over medium heat.
Step 2
Once the oil is hot, add the chopped shallots and garlic. Fry them until golden brown and crispy (about 15-20 minutes). Be careful not to burn them.
Step 3
Remove from heat and strain through a sieve, preserving the infused oil in a bowl underneath. Set aside shallots and garlic for 5 minutes to crisp as they cool.
Step 4
In a medium-sized bowl, add the rest of the ingredients, then pour in the oil and mix well. Add the crispy shallots and garlic and mix again.
Step 5
Taste and adjust salt or sugar as needed.
Step 6
Pour into an airtight jar and enjoy. Store in the fridge.
